GATR
For most people the answer is the GATR 45: it holds 42 cans plus ice, fits a family weekend or a full day on the water, and still fits behind a truck seat. Go up to the 70 if you are feeding a group or staying out past two days, and down to the 20 if it is mostly you, mostly day trips.

Buy for volume of ice, not for number of drinks. The working ratio is about two parts ice to one part contents — so a cooler that "holds 42 cans" holds 42 cans and the ice that keeps them cold, not 42 cans and a token bag on top.
Two practical consequences. First, a half-empty cooler performs worse than a full one, so slightly oversizing is not a penalty as long as you fill the gaps. Second, if you are genuinely between two sizes, take the larger one — you can always pack a cooler tighter, but you cannot make it bigger at the boat launch.

Past three days, the better move is usually two coolers rather than one enormous one: food in the cooler that stays shut, drinks in the one that gets opened forty times a day. It costs less than the next size up and it protects the food side completely.
A GATR 70 weighs 42 lbs empty. Loaded with 80 cans and ice, it is well past what two people want to carry across a parking lot, a levee or a beach.
Both wheeled models run solid off-road wheels, and they stay stable until the cooler is lifted from the opposite end — so it sits locked in place behind the bed of a truck, a buggy or a boat rather than rolling off on the first turn. If your cooler is going anywhere that is not a straight lift from tailgate to campsite, buy the wheels.
For a family of three or four over a weekend, the GATR 45 — 42 cans plus ice, with room for food once you pack the ice properly. Move up to the GATR 70 with Wheels if there are more than four of you or the trip runs longer.
